The Cortinarius (Pers.) Gray, 1821, is a genus which includes over 500 species of fungi with very variable size, grouped into various subgenres. For the great variability and similarity of fungi belonging to this genus, often the differences are minimal and only ascertainable through edibility that therefore play a decisive role in the identification of each species. This usually includes a few edible species as there are many species without nutritional value and many poisonous species, plus some deadly species: so the cortinari consumption is not recommended for anyone who doesn't know them in depth.
